Healthy Carrot Cake with Vegetable Carvings

A couple of days ago, I decided to make something a little different. I was in the mood for baking and wanted something that I could enjoy eating, that wasn’t too unhealthy for me. So, I went with carrot cake with cream cheese icing! Ok, so the icing itself isn’t what I would call healthy, but to top it all off, I used some carrots and cucumbers. I carved flowers out the carrot pieces, and then made the leaves out of the cucumbers and used those to decorate on top of the richer parts of the dessert.

Sure, it’s not necessarily something you would want to feed to a diabetic, but at least if you cover up the icing itself, it can’t be that bad, right? It’s also a colourful and creative idea to change things up a bit.

    That cake looks sweet, good choice for healthy eating. It’s also one more way to use carving centerpieces!

  • In its sugary modern incarnation, however, and crowned with creamy icing, the healthiest thing about carrot cake is the name. But then that’s probably why it’s so darn popular.
